Elaine Bakes: Cornflake Cookies

Chinese New Year (CNY) will be here in a few days' time. When I was younger, mom and aunt used to bake lots of CNY cookies and other goodies at this time of the year for own consumption as well as to be given out to close friends and relatives. I remembered my aunt used to bake batches after batches of cookies after work till middle of the night. It was one of the best time of the year where there were lots of indulgence of good food and family gatherings, not to mention fireworks too! To be honest, it is still one of the best festive seasons to look forward to!

One of my favourite bakes of all the CNY bakes were cornflake cookies. My aunt used to have them baked in various versions including ones with raisins, topped with chopped glazed cherry bits. They were the ones that I disliked most. I liked the plain ones best. Sorry to disappoint you aunt (if you are reading this). Haha...The recipe that I'm sharing today was found in one of the cooking forums with slight modification to adjust to my liking, but tastes somewhat similar to my aunt's.

I'm not sure if this CNY cookie is a Malaysian/Singaporean invention because my friends from Hong Kong has never heard of such cookie. How strange!



Here's the recipe:

Cornflake Cookies
(Makes 60)

225g Butter, softened at room temp.
125g Caster sugar
300g All-purpose-flour, sifted
1 Egg
2 C. Corn flakes

1. Pour 2 cups of corn flakes into a zip lock bag and crush corn flakes into small bits. Place in a bowl and set aside.
2. Cream butter and sugar until light and fluffy.
3. Add egg and mix well.
4. Fold in sifted flour with a spatula. When the dough starts to get too difficult to manage with the spatula, knead the dough with your hands (please wash your hands before handling the dough!).
5. Roll dough into tiny balls and set aside (I found this method more tedious. Skip this and go to step 6 instead).
6. Pinch approx. 1 tsp worth of cookie dough and place it in a bowl filled with crushed corn flakes from Step 1.
7. Coat the dough with corn flakes and roll into tiny balls.
8. Bake in pre-heated oven set at 200C for approx. 25 - 30 mins. or until browned.
9. Leave cookies to cool in cooling rack and stack them in airtight boxes once cooled.

Note: Hope you enjoyed the this cookie as much as I did!
